It’s starting to get cooler here in Nashville and while I figure out my heating options for my van, this Easy One Pot Vegan Tortellini Vegetable Soup will be on repeat. It’s so simple, healthy, and bursting with flavor.
To be honest, when I make soup I never really have a plan, so getting creative with what ingredients I have on hand is always the best part. I put on a little sultry jazz music, have a glass a wine, and start chopping. It’s a whole mood. A soup mood? Sure. Go with it.
I had vegan ingredients on hand, but you can make this with any tortellini or pesto you love. I’m LOVING the Kite Hill Tortellini with their Almond Milk Ricotta Alternative (this isn’t sponsored but… ahem… hey Kite Hill if you’re here, I love you. I think we’d be really good together).

Oh yeah. Soup.
The best part of most of the recipes I share with you is that there are almost always very little dishes. That comes with living in a van but also, I love avoiding a hefty clean up.
I prefer my vegetable soups to be loaded with vegetables so this one pot soup will definitely satisfy your noodley soupy craving (is that a thing?). Of course, if you try this PLEASE let me know. I can’t wait to hear what you think!
Serves 2-4 | Time: Prep: 10 min Cook: 30 Min
Easy One Pot Vegan Tortellini Vegetable Soup
What you need:
- One 32 oz container Organic Vegetable Broth
- One medium white onion (chopped)
- One Sweet Potato (Finely chopped)
- One package of Kite Hill Vegan Tortellini
- Broccoli Florets (fresh or frozen)
- 2 Tbs Vegan Pesto – I prefer Gotham Greens
- Fresh Kale Chopped
- Optional: Salt and Pepper (to taste)
In a large pot over medium heat, bring vegetable broth to a simmer. Add onions and let simmer until they become soft and slightly translucent. Add sweet potato and pesto. Cover and let simmer for 5-7 minutes.
Once the sweet potatoes are starting to soften, add tortellini. Cover and let simmer for 10 minutes (or until tortellini are almost ready). Optional: Add salt and pepper to taste. Then add broccoli and kale.
Stir and cover until tortellini is done and kale has wilted. Serve immediately.
